Winemaking: A blend of plots including one from Jules Chauvet, and another from 80 year old vines outside of his father’s (Yvon Métras) home. Organic and Biodynamic. Hand harvest. After cold stabilization, carbonic maceration in concrete tank, with indigenous yeast. Aging in neutral oak. No sulphur added.

From the Importer Steven Graf: Jules started out on his own in 2014, making just one cuvee called, Bijou!, a local term for wine of clarity and purity. Following in his father’s footsteps, Yvon Métras, Jules wines are just that. At just 3ha, each of his wines exhibit a transparency and depth thats sorely lacking int he region. Jules works patiently and picks late, when ripeness is at its peak, then waits for a long, carbonic fermentation to start in his lofty cellar located in Vauxrenard, high-up in the Cru of Chiroubles. Jules works a couple of parcels from his Father, as well as a plot gifted to him by Jules Chauvet. He works completely without additions in the fields and in the cellar.
