Winemaking: co-planted grapes are co-fermented and vinified unfined/unfiltered/zero SO2.
‘Rouge Fruit’ comes from a parcel planted in 1906 in Gimios, the land of Minervois (Languedoc). Back in the days the farmers would always co-plant different varieties in order to not have the same debudding date in case of frost, to have a diverse pollen population for complexity, and in order to be able to harvest to have some diversity. In this parcel you can find 20+ different varieties like Carignan Noir, Carignan Blanc, Grenache Gris, Grenache Blanc, Grenache Noir, Mourvèdre, Cinsault, Syrah, Aramon, Muscat à Petits Grains, Œillade, Riveyranc….Grapes are harvested according to the lunar calendar, destemmed, macerated, and then pressed. Fermentation and élevage are done in epoxi vats. Bottles unfined, unfiltered, no sulfur added. Bottling occurs the following Spring.
