Winemaking: The harvest is entirely manual, with grapes hand-picked and initially sorted in the fields, followed by a second sorting in the cellar. The grapes are kept whole-bunch for direct pressing, without prior crushing. Debourbage (settling of solids) occurs two days after harvest. Fermentation is conducted in temperature-controlled stainless steel vats using only indigenous yeasts. The wine is aged for 10 months in stainless steel vats and then again for 6 months in the bottle. There is one soutirage during primary elevage and some light fining and filtration. A small dose of sulfur is added at bottling.

From us at M&L: Do one thing and do it well, as they say. What would we do with a microscopic, 1.4 hectare vineyard in the prestigious Clos du Roy of southern Sancerre? We’d make the most of it! Twin brothers Alexandre and Antoine Vétois do that and more. They are meticulously regenerating their tiny plot and making only one wine.

This is exciting stuff: by reclaiming the Sancerre AOC as a home to authentic, naturally made wines, the Vétois are certainly in the minority in the region.

The wine itself is pure, transparent, slightly-wooly Sauvignon. No sharp pyrazine or cloying grapefruits here - just river stones, distant brûléed peaches, and thirst quenching rain water - it’s as revitalizing as it is delicious.
