Winemaking: from a very small vineyard called "Clos de la Huppe". Plowing and the work in the vineyard is done by hand with the help of a horse. Harvested at night, in small basket. Direct press into stainless then part of the wine is aged on the lees in old oak barrels, while the other part is aged in concrete egg shaped vats. No sulfite used during harvest or vinification.
