Winemaking: Organic farming. 500 meter elevation above the Trebbia river in Emiglia. 15 - 40 year old vines. Hand harvested. Grapes fermented on the skins with native yeast. 300 liters out of 10,000 were carbonically macerated and the rest fermented in stainless. Then all macerated in layers for 40 days. Elevage in Stainless. No additions.
