Azienda Agricola COS ‘Ramí’ Bianco 2021

Grapes: Grecanico, Inzolia
Winemkaing: Organic/Biodynamic farming practices, hand harvested grapes. Destemmed, cold maceration of 6-10 days before fermentation, pump overs during fermentation in open concrete tanks with wild yeast. 10 to 15 days maceration. Élevage 8-10 months in concrete tanks, on the lees. Minimal sulfites added.
From the Importer UVA Imports: ‘Ramí’ is a little lighter and more approachable for white wine drinkers first stepping out into the “orange wine” category. The skin contact is expressive, but the flavors are approachable and not too intense. A crisp wine with tangerine, orchard fruits, thyme, jasmine, ginger, and spice. A medium-bodied wine with delicate tannins and a dry minerality of wild yeast and salted almond followed by a balanced finish.
COS is a legendary producer that helped pave the way for the natural wine movement. It all started in 1980 with three friends fresh out of high school. The three friends; Giambattista ‘Titta’ Cilia, Giusto Occhipinti, and Cirino Strano, started making wine with some of the family vineyards and they were hooked – COS is an acronym for their last names. They returned to the roots of winemaking, eventually adding Amphora for aging some of the wines -Amphora (Pithos) are large clay pots that predated barrels. In the heart of Sicily’s only DOCG, Cerasuolo di Vittoria, COS is producing some of the most respected natural wines in the world, while still maintaining the classic style and character of their region.
