Winemaking: Biodynamic & Certified Organic. Hand picked, indigenous yeast, co-fermented in stainless steel aged in cuve for one year.
From us at M&L: The short story is that Cyrille Sevin taught math in Paris, all the while restoring an old house in the Loire which he then sold and used the proceeds to purchase vines in Mont Près Chambord, Cheverny. Dreamy-sounding, the reality is he works his tail off farming the gravelly, clay, and silica soils to produce pure, classically-delineated wines that are timeless and age-worthy.
Le Bois de Bisson rouge is resplendent with that identifiably Cher black cherry/cocoa nib thing (à la Venier or the late, great Olivier Lemasson) but its frame is sturdy and fine, with a perfect balance of extraction, tension, and juice.
La Quadrature du Blanc has a shiny, river water texture and subtle, wet fruits that ground the citrus oil top notes. It’s a stunner for fans of classic, refreshing, fine white wines of the Loire.
Then there’s the Crèment de Loire Brut Non Dosé. It’s an audacious throwback cuvée that showcases Cyrille’s passion for sparking wine. Aged 7 years (!) sur latte, this is the kind of wine we see far too infrequently. Cyrille’s patience and precision are our reward.
From the Importer Steven Graf Wine: Cyrille spent most of his professional career as a math teacher in Paris, but he always dreamed of having his own vineyard. So, early in his career, he purchased a run-down home as an investment. After fixing it up, he was able to sell the home, retire and buy some 8 hectares in the Cheverny area. Today he has 11h. under vine and makes natural wine, specializing in sparkling wines of elegance and power, showing that natural, Loire sparkling isn't just about pet' nat.
