Grapes: 70% Grenache Blanc, 10% Roussanne, 20% Clairette

Soil: pebbles, clay, sand

Winemaking: Manual harvest, severe and rigorous sorting follows. The grape varieties have different maturities, which is why La Ferme du Mont staggers the harvest. The Grenaches are harvested at the beginning of September, then 4 weeks later the Roussane follows. The berries undergo direct pressing and are fermented in a barrel made by the state with wood from the Tronçais forest.

From the producer: Complex nose of quince, white truffle and small flowers. Fermentation and aging in wood with very fine, slightly heated grain provides a robe of chestnut all in softness and harmony. The mouth is consistent with the aromatic notes, terroir minerality, beeswax and wild flowers are perfectly balanced by a châteauneuvois but above all by a freshness of structure and aging for a final result between the South of Burgundy and the purity of our appellation.
